Yes. We raise and process our birds on site in our fully licensed, government-inspected poultry abattoir. This keeps handling minimal and freshness high.
Our chickens are free-run, not free-range — and that’s a deliberate choice.
Free-run chickens move freely inside clean, spacious barns designed to protect them from parasites, disease, and harsh weather. Over decades of experience, we’ve found this produces healthier birds than outdoor free-range systems, where chickens are more likely to pick up worms, lice, mites, and illness.
Our birds are fed a non-GMO, non-medicated feed. We do not use routine antibiotics.

A capon is a rooster that’s raised longer than a standard chicken, producing a larger, more tender, and flavourful bird. Capons are considered an old-fashioned, boutique poultry option and are especially popular for holiday meals.
Yes. We raise Cornish game hens several times a year. These smaller birds are extremely tender and are often compared to veal for their texture and flavour.
We process birds fresh for most of the year.
There are short seasonal periods (typically around April and mid-October) when we offer fresh frozen birds instead. If freshness matters for a specific date, just ask.
